Overview
Meat Alternatives Grade (GG-MAT) is one of Apeksha Enterprises' 14 application-engineered guar gum grades, developed specifically for plant-based meat analog manufacturers. Real meat's texture comes from two separate things: the aligned muscle fiber structure that gives it bite and directionality, and the moisture and fat held within that cellular structure that release as juiciness when you chew. Plant-based analogs recreate the first through extrusion — high heat, pressure, and shear align plant proteins, usually soy or pea, into a fibrous structure that mimics muscle fiber. Guar gum's role is on the second half of that equation: holding moisture within the extruded structure so it doesn't dry out during processing, freezing, and cooking, and helping keep the fat phase stable within the matrix so it releases as juiciness on the bite rather than leaking out before the product even reaches the pan. Typical dosage ranges from 0.2–0.8%, adjustable to the specific analog format and cooking method you're formulating for.

Formulation Guidance
Add guar gum to the protein pre-mix before it goes through the extruder, rather than post-extrusion — this ensures even distribution through the high-shear, high-heat extrusion process, where achieving uniform distribution afterward is much harder to control.
Dosage is worth tuning to your product's typical cooking method rather than using one setting across your whole range: products intended mainly for high-heat, fast cooking (grilling, pan-searing) lose moisture faster than those cooked by gentler methods (baking, steaming), so a dosage calibrated for oven preparation may dry out faster on a grill.
Because most meat analogs are sold frozen and go through a full freeze-thaw-and-cook cycle before consumption, evaluate final texture after that complete cycle rather than immediately after forming or extrusion — a product that has excellent bite and juiciness right off the line can perform differently once it's been frozen, thawed, and cooked the way a consumer actually would.
